Asian-Style Taco Tuesday Made Easy with Instant Pot
SERVES: 4 PREP TIME: 10 MINUTES COOK TIME: 1 HOUR 10 MINUTES
Ingredients
1 (1 to 1.5 lbs) pork tenderloin , cut into 2 to 3 pieces
3 tablespoons vegetable oil divided
1 teaspoon salt and pepper
4 medium carrots thinly sliced
1 bunch of broccolini cut into 2 inch pieces
2 green onions thinly sliced
fresh cilantro
12 tortillas
Instant Pot Ingredients
1 cup water
1/2 cup light soy sauce
1 tablespoon miso paste
1/4 cup dry sherry
1/4 cup brown sugar
1 tablespoon ginger , minced
6 garlic cloves , smashed
1 tablespoon cumin powder
2 teaspoons smoked paprika powder
1 1/2 tablespoons chili garlic paste
Sauce Thickening Ingredients
2 tablespoons cornstarch
1/4 cup water
Instructions
Thoroughly pat dry the pork with paper towels. Sprinkle salt and pepper on all sides.
Add 2 tablespoons of oil into the Instant Pot. Swirl to coat the bottom. Turn on the Saute function of the Instant Pot and add the pork once it notifies as “hot”. Cook until all sides are golden brown, about 5 minutes on each side. Add more oil, if needed. Transfer the browned pork to a plate. Immediately add the water. Use a spatula to scrape off any brown bits stuck to the bottom of the Instant Pot. Turn off Saute function.
Add the remaining Instant Pot ingredients. Stir to mix well.
Transfer the cooked pork back into the Instant Pot. Cover the pot and seal the pressure valve. Use Manual mode on high pressure for 1 hour. Use natural or fast pressure release when done.
Meanwhile in a medium skillet heat remaining 1 tablespoon of vegetable oil on medium high. Add sliced broccolini lightly salt and pepper cook about 3-4 minutes per side undisturbed. The florets should have some char. Remove from heat.
Remove the pork from the pot and transfer to a bowl
Turn on the Saute function again to bring the sauce to a boil. Whisk the cornstarch and water together in a small bowl. Slowly add half of the mixture into the pot. Stir to mix well to thicken the sauce. If the sauce is still thin, slowly add the more while stirring, until the sauce reaches the desired thickness. Turn off the Saute function immediately and transfer the sauce to a big bowl.
Shred the pork using two forks in the bowl. Pour desired amount of sauce on top.
To serve, warm tortillas, add shredded pork to tortillas, top with carrots, green onion, broccolini, cilantro. On the side serve with extra sauce, sriracha and limes.
